Basil Lime Chicken and Sweet Potato Bake

My husband has a favorite meal that he loves for me to make, Roasted Lemon Rosemary Chicken. It is a healthy meal, but why we are on South Beach Diet we aren’t allowed to have it because it has white potatoes and a whole chicken. We can only eat skinless chicken breast and sweet potatoes so that meal would kind of be wasted on us. But he loves it so much he keeps asking for it (if you haven’t tried it you should give it a shot, it is delicious).

In order to fill his cravings I decided to come up with a South Beach safe version. Instead of the white potatoes I used sweet and instead of roasting a whole chicken I used chicken breast.

Have you ever actually seen a wolf in sheep’s clothing? Something that sneaks around looking all sweet and innocent full of fluff and then you find out it is dark and evil. I feel like this is a problem that is lurking in the kitchens of America.

We feel like we are eating something healthy and nutritional and then, just to feel good about ourselves, we read the nutritional information and see that we are wrong. It’s like that episode of Seinfeld where everyone is eating frozen yogurt by the shipload because they thought it was low fat. After putting on pounds they sent it off to have the yogurt tested and discovered that it was full of calories.

Over the holidays my Mom made this awesome spinach dip that everyone went nuts over. It was rich and cheesy and she served it with crunchy tortilla chips. My mom doesn’t normally cook like this. When we were kids if we asked for a snack she’d tell us to heat up a chicken breast. In fact, when I asked her for her spinach dip recipe she said she threw it away after Christmas because it was so unhealthy.
