Weekend Inspiration | Recipe Round-Up

It is time for another recipe round up for all your weekend inspirations and aspirations. I thought I would kick things off with something inspired by one of my great foodie loves. Over at Steph’s Bite by Bite she has come up with a Pumpkin Spice Latte Coffee Cake. Not only is it a pumpkin coffee cake but it has a cream cheese swirl and is topped off with a coffee icing! Tell me, how can that not be a great start to your day?

For our main course I thought I would take it back to my family roots. My dad comes from a German family. In fact, our holiday specialty is Diaper Soup. No, it’s not what you think. It’s dumplings filled with dry curd cottage cheese and swimming in a nice sour cream and broth soup. And no, I will not give you the recipe. Family recipes are sacred to me.

Anyways, over at The Black Peppercorn they have made a yummy looking pork schnitzel. If you are not familiar with this German treat it is thin slices of pork that have a crumb coating and fried and usually topped with brown gravy. Kind of a German equivalent of the chicken fried steak. They are super crispy and yummy. I have always enjoyed schnitzel but I’ve never tried making it myself. I’ll have to give this one a shot and serve it with applesauce of course.

To go with it Joy the Baker has come up with something I know I will enjoy, salt and vinegar potato salad. You will have to give this a try for your next pot luck dinner. It is actually seasoned with apple cider vinegar and Old Bay Seasoning. She has also a great podcast to help you further your foodie education.

And to finish it all off Sweet Lil Piggy has come up with peanut butter and jelly muffins. Just wait till you see the picture, you’ll want one too. This may be a breakfast food, but I’ll have this sweet treat any time. We have an ice cream social coming up this week at church and this recipe inspired me to try and make peanut butter and jelly ice cream. I’ll let you know how it turns out.

I hope you have a great weekend and you get all your plans accomplished, especially if your plans include lying in bed until way to late in the day and reading a good book. Just be sure to follow it up with a little pumpkin spice latte coffee cake!

Thanks for featuring my muffin recipe….. I ate more of them than I care to admit and only one was at breakfast time lol. Great recipe round up and I really like your blog. :)
