We’re getting fancier around here! My most popular blog post is the avocado chocolate chip cookies. I have heard from so many of you saying how much you enjoy them so I decided to give you another easy cookie recipe that is also healthy. I decided to make healthy oatmeal cookies with avocado. And, to make it even better, I’ve got a video for you in full technicolor! I think it’s not too terrible for a first try. Seeing this in video form really makes it easier for you to see the texture and color as it cooks, something a lot of you have asked me about.

Healthy Oatmeal Cookies with Avocado
Ingredients:
1 Cup avocado
1 1/4 Cup Splenda or sweetener of choice
2 eggs
1 teaspoon vanilla
1 Cup whole wheat flour
1 1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon nutmeg
2 Cups whole oats
3/4 Cup raisin
1 Cup pecans (optional)
Directions:
1. Preheat oven to 350. Remove avocado from skins and blend until smooth. Add Splenda and mix to combine. Add egg and vanilla and blend on medium high for about one minute.
2. Pour in flour, baking soda, salt, cinnamon, and nutmeg. Mix on low until combined and then beat on medium high for about thirty seconds. Add in oatmeal and mix until combined. Stir in raisins and pecans.
3. Place teaspoon sized mounds onto very lightly greased cookie sheet and press cookies down with spoon. Bake at 350 for 10- 12 minutes or until brown. Dig in!

i really loved this recipe.
only thing is we (here in switzerland do not have splenda, or anything comparative, i was googling for ages, and could not find anything similar…
1st time i made them with brown sugar instead and they where just delicious,
2nd time i tried with a granuled stevia based powdered sweetener, unfortunally the sweetener was terribly disgusting for my taste an i could just throw everything away, -.-’
so the 3rd time i used 1cup of sugar and 1/4 of honey, was also super yummy even more than the one with brown sugar alone and instead of the nutmeg i put in a tiny bit of cardamom (i just think this spice suits almost every dish and gives it something exotic, i am a total addict <3 ^^ )
does anyone perhaps know anything else to swich the splenda/sugar for that wouldnt turn out more bitter than sweet?
does splenda really taste that much like the real thing? i have a reeealy sensitive tounge that can almoste taste every artificial sweetener appart form the real stuff, wich makes me being a sweettooth quite hard…
also thanks a lot again for this wonderful recipe, the real BIIIG plus is that compared to "usual" cookies those are wonderfully filling and satisfying so i absolutely eat less, wich is wonderful
I’m so glad that you enjoyed this recipe and have made it so many times! Splenda is very similar to sugar but does have a slight after taste. What is so great about it is that it measures equally to sugar when baking, unlike agave which measures much less than sugar and requires some trial and error. I hope you can find a good substitute where you are. Thanks!
Awesome idea to use avacados in place of butter! I’m going to try it today and I’m SO excited. What a great site you have here. But I just wanted to pass something along, because it’s painful for me to see so many people saying it’s ok. Until a couple months ago I had no real knowledge either but something made me want to learn the truth. I discovered that ALL sweeteners (sugar, agave, honey, splenda, stevia, etc.) are processed by the body the same. The ONLY ones that have some health benefits are honey and REAL blue agave nectar. But still since they are processed the same and still make you crave more sugar you should eat them in moderation, like a tsp a day. Let me just say that I have had a major sugar addiction my whole life and since I found this info I determined to change my habits. I only eat sugar(including ANYTHING that has sugar in it besides bread) friday night, sat and sunday. Let’s just say I don’t crave sugar like I used to, except for monday and tuesday when my body is once again having withdrawals. Problem, I know. But anyways, please search online for the truth! The only reason I’m bringing this up to you is that you seem totally awesome and I love your desire to be healthy as that is something I love. I hope this didn’t offend you, you can delete this post if you want. That’s cool. I just want people to KNOW. I’m going to make these cookies with a honey sugar combo and just accept the fact that no matter what a cookie is a dessert. I’ll be eating them tonight! Thanks!

I can’t wait to make these tonight and was happy to read great reviews for the cookies. I just happened to hear a nutritionist on the news mention that you could substitute advocados for butter in oatmeal cookies I was so intrigued by the idea ( and was wondering what to do with the rest of my very ripe avocados) that I immediately set out to google the recipe. Many came up in my search but the fact that you had made a video caught my eye and it was a good thing as it was very informative and there’s no way I can go wrong…or can I. Thanks for the video. And the recipe. Also looking at the date of your last post I’m wondering if you’ve given up this hobby?
